Ingredients:
8 TB (1/2 cup (1 stick unsalted butter)
3/4 cup white sugar
1/4 cup brown sugar
1 egg (room temperature) lightly beaten
2 tsp vanilla extract
1/2 tsp salt (1 tsp kosher)
1/4 tsp baking soda
1 TB milk (non-dairy milk works as well)
1 cup bread flour (it makes the cookie chewy) (All purpose flour works too)
1/4 cup chocolate chips
1/4 cup pretzels, oreos or crushed potato chips etc...
A pinch of Flakey Salt on top of each cookie
Method
1.) Preheat oven to 375F (or air fryer/toaster oven to 350F). Make a brown butter. (This is the key to the toffee flavor, you can Google how to do it) Allow to cool in the fridge for 10-15 min or the cookies will spread too much.
2.) Cream white sugar, brown sugar and brown butter together for 5 min until light and fluffy. Add beaten egg, milk and vanilla extract.
3.) Sift bread flour, baking soda and salt together in a separate bowl and add a little at a time into the butter sugar mixture, gently folding and and not over mixing. Fold in chocolate chips and other toppings until incorporated. Put mixture in the fridge for 10-15 min to firm up.
4.) Scoop tablespoon sized balls onto a parchment paper lined cookie sheet and use your fingers to gently press down the cookies and sprinkle flaky salt on the top of each cookie. Return the cookies to the fridge while the oven reaches temperature.
5.) Bake in the regular oven at 375F for 14-15 until golden brown, completely flat and slightly crispy. Or bake in air fryer/toaster oven at 350F for 10min. Allow to cool. Enjoy!
